Description

Delicious and fluffy lemon poppy seed muffins made in an air fryer.


Ingredients

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice

Instructions

  1. In a bowl, mix flour, sugar, baking powder, salt, and poppy seeds.
  2. In another bowl, whisk milk, oil, eggs, lemon zest, and lemon juice.
  3. Combine wet and dry ingredients until just mixed.
  4. Preheat air fryer to 320°F (160°C).
  5. Line muffin cups with liners and fill them with batter.
  6. Air fry for 12-15 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before serving.
