Delicious and fluffy lemon poppy seed muffins made in an air fryer.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup poppy seeds
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
Instructions
- In a bowl, mix flour, sugar, baking powder, salt, and poppy seeds.
- In another bowl, whisk milk, oil, eggs, lemon zest, and lemon juice.
- Combine wet and dry ingredients until just mixed.
- Preheat air fryer to 320°F (160°C).
- Line muffin cups with liners and fill them with batter.
- Air fry for 12-15 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
- Store leftovers in an airtight container.
- You can substitute yogurt for milk for a richer flavor.
- Adjust lemon juice based on your taste preference.
