Ingredients

  • 1/2 cup almond flour
  • 1/2 cup applesauce
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 medium apple, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix buckwheat flour, almond flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together applesauce, maple syrup, melted coconut oil, and eggs.
  4. Combine the wet and dry ingredients.
  5. Fold in the diced apple.
  6. Pour the batter into a muffin tin lined with paper cups.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
