Delicious and healthy apple buckwheat muffins that are gluten-free and dairy-free.
Ingredients

- 1 cup buckwheat flour
- 1/2 cup almond flour
- 1/2 cup applesauce
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 medium apple, diced
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix buckwheat flour, almond flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together applesauce, maple syrup, melted coconut oil, and eggs.
- Combine the wet and dry ingredients.
- Fold in the diced apple.
- Pour the batter into a muffin tin lined with paper cups.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Can substitute maple syrup with honey if not vegan.
- Add nuts or raisins for extra flavor.
