Ingredients

- 1 cup dried apricots
- 1 cup almonds
- 1/2 cup shredded coconut
- 1/4 cup honey
- 1 teaspoon vanilla extract
Instructions
- Soak apricots in warm water for 10 minutes.
- Drain apricots and chop them finely.
- In a food processor, combine apricots, almonds, coconut, honey, and vanilla.
- Process until the mixture is sticky and well combined.
- Roll the mixture into small balls.
- Chill truffles in the refrigerator for 30 minutes.
- Serve chilled or at room temperature.

- Store truffles in an airtight container.
- These can be made ahead of time.
