- 4 bone-in chicken thighs
- 2 tablespoons unsalted butter, softened
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix softened butter, parsley, thyme, rosemary, garlic, salt, and pepper.
- Pat the chicken thighs dry with paper towels.
- Rub the herb butter mixture under the skin and on top of the chicken thighs.
- Place the chicken thighs skin-side up in a baking dish.
- Bake for 35-40 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving.
