Ingredients

  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pecans
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup butter, melted
  • 1/4 cup erythritol or preferred sweetener
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup sugar-free syrup
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, walnuts, pecans, coconut, melted butter, erythritol, cinnamon, and nutmeg.
  3. Add sugar-free syrup and vanilla extract to the mixture.
  4. Stir until well combined.
  5. Line a muffin tin with paper liners.
  6. Scoop the mixture into the muffin cups, pressing down firmly.
  7. Bake for 15-20 minutes until golden brown.
  8. Let cool before serving.
