Description

Healthy banana oatmeal muffins without flour or sugar.


Ingredients

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mash the bananas until smooth.
  3. Add oats, applesauce, almond milk, baking powder, baking soda, cinnamon, and salt. Mix well.
  4. If using, fold in the chopped walnuts.
  5. Line a muffin tin with paper liners and fill each cup with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • Store muffins in an airtight container for up to 3 days.
  • For a sweeter taste, add a splash of vanilla extract.
