Description

A classic chocolate cake with cherries and whipped cream.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth.
  5. Stir in boiling water until well combined.
  6. Pour batter evenly into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cakes cool for 10 minutes, then remove from pans.
  9. Once cooled, slice each cake in half horizontally.
  10. Place one layer on a serving platter. Spread whipped cream and cherries on top.
  11. Add another layer and repeat until all layers are stacked.
  12. Frost the top and sides with remaining whipped cream and garnish with chocolate shavings.

Notes

  • Use fresh cherries for better flavor.
  • Chill the heavy cream for easier whipping.
  • Store leftovers in the refrigerator.
