Delicious blueberry lemon truffles that are rich in flavor and easy to make.


Ingredients

  • 1 cup fresh blueberries
  • 1 cup almond flour
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt

Instructions

  1. In a blender, puree the blueberries until smooth.
  2. In a bowl, combine almond flour, honey, melted coconut oil, lemon juice, lemon zest, and salt.
  3. Add the blueberry puree to the mixture and stir until well combined.
  4. Chill the mixture in the refrigerator for 30 minutes.
  5. Once chilled, scoop out small portions and roll them into balls.
  6. Place the truffles on a plate lined with parchment paper.
  7. Refrigerate for another 30 minutes to set.

  • Use frozen blueberries if fresh ones are unavailable.
