Delicious blueberry lemon truffles that are rich in flavor and easy to make.
Ingredients

- 1 cup fresh blueberries
- 1 cup almond flour
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
Instructions
- In a blender, puree the blueberries until smooth.
- In a bowl, combine almond flour, honey, melted coconut oil, lemon juice, lemon zest, and salt.
- Add the blueberry puree to the mixture and stir until well combined.
- Chill the mixture in the refrigerator for 30 minutes.
- Once chilled, scoop out small portions and roll them into balls.
- Place the truffles on a plate lined with parchment paper.
- Refrigerate for another 30 minutes to set.
Notes
- Store in an airtight container in the fridge.
- Use frozen blueberries if fresh ones are unavailable.
- Adjust sweetness to taste by adding more or less honey.
