Quick and easy blueberry muffins made from cake mix.
Ingredients

- 1 box of yellow cake mix
- 1 cup fresh or frozen blueberries
- 1/2 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cake mix, milk, vegetable oil, eggs, and vanilla.
- Mix until smooth.
- Gently fold in the blueberries.
- Line a muffin tin with paper liners.
- Pour the batter into the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- For extra flavor, add lemon zest.
