Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together brown sugar, granulated sugar, Greek yogurt, eggs, and vanilla.
  4. Combine wet and dry ingredients.
  5. Fold in grated carrots and walnuts if using.
  6. Fill muffin cups with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool before serving.
