Description
Delicious carrot cake truffles coated in chocolate.
Ingredients
Scale
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup finely chopped walnuts
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1/4 cup cream cheese
- 2 cups chocolate chips
Instructions
- In a bowl, mix grated carrots, crushed pineapple, walnuts, cinnamon, nutmeg, salt, brown sugar, and cream cheese.
- Form the mixture into small balls and place on a baking sheet.
- Chill the truffles in the refrigerator for 30 minutes.
- Melt the chocolate chips in a microwave or double boiler.
- Dip each truffle into the melted chocolate and place back on the baking sheet.
- Let the chocolate set before serving.
Notes
- Store truffles in the fridge.
- Use white chocolate for a different flavor.
- Add raisins for extra sweetness.
