Description

Delicious carrot cake truffles coated in chocolate.


Ingredients

Scale
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup finely chopped walnuts
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup cream cheese
  • 2 cups chocolate chips

Instructions

  1. In a bowl, mix grated carrots, crushed pineapple, walnuts, cinnamon, nutmeg, salt, brown sugar, and cream cheese.
  2. Form the mixture into small balls and place on a baking sheet.
  3. Chill the truffles in the refrigerator for 30 minutes.
  4. Melt the chocolate chips in a microwave or double boiler.
  5. Dip each truffle into the melted chocolate and place back on the baking sheet.
  6. Let the chocolate set before serving.

Notes

  • Store truffles in the fridge.
  • Use white chocolate for a different flavor.
  • Add raisins for extra sweetness.
