Instructions

  3. In another bowl, whisk together oil and eggs.
  4. Stir in grated carrots and crushed pineapple.
  5. Combine wet and dry ingredients until just mixed.
  6. Add walnuts if desired.
  7. Pour batter into greased cake pans.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let the cakes cool before frosting.
