Delicious chai-spiced muffins made with sweet potatoes. These muffins are gluten-free and vegan.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup gluten-free flour
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the mashed sweet potatoes and almond milk.
  3. Add maple syrup and melted coconut oil, and mix well.
  4. In another bowl, combine gluten-free flour, baking powder, baking soda, spices, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill muffin cups with the batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • Can substitute sweet potatoes with pumpkin puree.
