Description
Delicious chai-spiced muffins made with sweet potatoes. These muffins are gluten-free and vegan.
Ingredients

- 1 cup mashed sweet potatoes
- 1 cup gluten-free flour
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed sweet potatoes and almond milk.
- Add maple syrup and melted coconut oil, and mix well.
- In another bowl, combine gluten-free flour, baking powder, baking soda, spices, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill muffin cups with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Can substitute sweet potatoes with pumpkin puree.
- Experiment with different spices as desired.
