Ingredients

- 200g dark chocolate
- 100ml heavy cream
- 50ml champagne
- 25g unsweetened cocoa powder
- 1 tablespoon unsalted butter
Instructions
- Chop the dark chocolate and place it in a bowl.
- Heat the heavy cream in a saucepan until it just boils.
- Pour the hot cream over the chocolate and let it sit for a minute.
- Add the champagne and butter, then stir until smooth.
- Refrigerate the mixture for about 2 hours until firm.
- Use a spoon to scoop out small amounts and roll them into balls.
- Roll the truffles in cocoa powder to coat.
- Store in the refrigerator until ready to serve.
