Ingredients

  • 4 ounces dark chocolate
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the chocolate and butter together in a bowl over simmering water.
  3. In another bowl, beat the egg yolks with half the sugar until pale.
  4. Add the melted chocolate mixture and vanilla to the egg yolks and mix.
  5. In a separate bowl, beat the egg whites and salt until soft peaks form.
  6. Gradually add the remaining sugar and beat until stiff peaks form.
  7. Fold the egg whites into the chocolate mixture in three additions.
  8. Pour the batter into greased ramekins.
  9. Bake for 12-15 minutes until risen.
  10. Dust with powdered sugar and serve immediately.
