Ingredients

- 1 cup gluten-free flour
- 1/2 cup almond milk (or dairy-free milk)
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup chopped nuts (optional)
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, baking powder, cinnamon, and salt.
- In another bowl, combine almond milk, coconut oil, coconut sugar, and vanilla extract.
- Mix wet and dry ingredients until combined.
- In a small bowl, mix brown sugar and cinnamon for the filling.
- Fill muffin liners halfway with batter, add filling, and top with more batter.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.

- Use dairy-free milk for a dairy-free option.
- Store leftovers in an airtight container.
- These muffins can be frozen for later use.
