Ingredients

  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, baking powder, cinnamon, and salt.
  3. In another bowl, combine almond milk, coconut oil, coconut sugar, and vanilla extract.
  4. Mix wet and dry ingredients until combined.
  5. In a small bowl, mix brown sugar and cinnamon for the filling.
  6. Fill muffin liners halfway with batter, add filling, and top with more batter.
  7. Bake for 20-25 minutes or until golden brown.
  8. Let cool before serving.
