Delicious cinnamon roll muffins that are gluten free and dairy free.
Ingredients

- 1 cup gluten free all-purpose flour
- 1/2 cup almond milk
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the gluten free flour, baking powder, cinnamon, and salt.
- In another bowl, combine almond milk, melted coconut oil, coconut sugar, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until smooth.
- Fill a muffin tin with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- Can be served warm or at room temperature.
