- 1 ripe mango, pureed
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Fresh mango slices for garnish
Instructions
- In a saucepan, combine coconut milk, sugar, cornstarch, vanilla, and salt.
- Cook over medium heat, stirring constantly until the mixture thickens.
- Remove from heat and stir in mango puree.
- Pour the pudding into serving dishes and chill for at least 2 hours.
- Garnish with fresh mango slices before serving.
Notes
- Use ripe mango for better flavor.
- Adjust sweetness according to your taste.
- This pudding can be stored in the refrigerator for up to 3 days.
