Delicious cranberry, orange, and pecan muffins that are grain-free and paleo-friendly.
Ingredients

- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries
- 1/2 cup chopped pecans
- Zest of 1 orange
- Juice of 1 orange
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut flour, baking soda, and salt.
- In another bowl, whisk eggs, honey, melted coconut oil, vanilla extract, orange zest, and orange juice.
- Combine the wet and dry ingredients until well mixed.
- Fold in cranberries and pecans.
- Line a muffin tin with liners and fill each cup with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let muffins cool before serving.
Notes
- Store muffins in an airtight container.
- Substitute honey with maple syrup for a different flavor.
- Use dried cranberries if fresh are not available.
