Ingredients

- 🥚 Eggs: 2 large
- 🧈 Unsalted butter: 1/4 cup (60 g), melted
- 🍦 Vanilla extract: 1 teaspoon
- 🧂 Salt: 1/4 teaspoon
- 🛢️ Vegetable oil: for frying (about 2 cups or enough to fill a pot)
Instructions
- In a large mixing bowl, whisk together the dry ingredients: flour, 1/2 cup sugar, baking powder, 1 teaspoon cinnamon, and salt.
- In another bowl, beat the eggs until frothy, then add milk, melted butter, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
- Using a cookie scoop, drop spoonfuls of dough into hot oil, frying in small batches.
- Fry for 2-3 minutes on each side until golden brown, using a slotted spoon to turn them.
- Remove from oil and place on paper towels to drain excess oil.
- While warm, roll the donut holes in the cinnamon sugar mixture until fully coated.
