Ingredients

- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour and powdered sugar. Add softened butter and combine.
- Press the mixture into the bottom of a greased 8×8 inch baking pan.
- Bake for 15 minutes.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt.
- Pour the mixture over the baked crust.
- Bake for an additional 20 minutes.
- Allow to cool and dust with powdered sugar before serving.
