Ingredients

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 cup sweetened condensed milk
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour three 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa, baking soda, baking powder, and salt.
- Add buttermilk, oil, eggs, and vanilla. Beat until smooth.
- Stir in boiling water until well combined.
- Pour batter into prepared pans.
- Bake for 30-35 minutes. Let cool.
- For the frosting, combine coconut, pecans, and condensed milk in a saucepan. Cook over medium heat until thickened.
- Spread frosting between and on top of the cooled cakes.
Notes
- Store leftovers in an airtight container.
- Let the cake cool completely before frosting.
- Use fresh coconut for better flavor.
