  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup sweetened condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa, baking soda, baking powder, and salt.
  4. Add buttermilk, oil, eggs, and vanilla. Beat until smooth.
  5. Stir in boiling water until well combined.
  6. Pour batter into prepared pans.
  7. Bake for 30-35 minutes. Let cool.
  8. For the frosting, combine coconut, pecans, and condensed milk in a saucepan. Cook over medium heat until thickened.
  9. Spread frosting between and on top of the cooled cakes.
