Ingredients

  • 1 cup shredded coconut
  • 1/2 cup maple syrup
  • 1/4 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup whole almonds

Instructions

  1. In a bowl, combine almond flour, shredded coconut, maple syrup, almond butter, and vanilla extract.
  2. Mix until well combined.
  3. Form the mixture into small balls.
  4. Press a whole almond into the center of each ball.
  5. Melt dark chocolate chips in a microwave or double boiler.
  6. Dip each truffle in melted chocolate.
  7. Place dipped truffles on a parchment-lined tray.
  8. Chill in the refrigerator until set.
