Ingredients

  • 2 chicken fillets
  • 1 head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season chicken fillets with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. While the chicken is grilling, remove leaves and stem from the cauliflower and chop it into florets.
  5. Pulse cauliflower florets in a food processor until it resembles rice.
  6. Heat a pan over medium heat and add a drizzle of olive oil.
  7. Add the cauliflower rice to the pan and sauté for 5-7 minutes until tender.
  8. Slice the grilled chicken and serve it over the cauliflower rice.
  9. Garnish with fresh parsley.
