Ingredients

- 2 chicken fillets
- 1 head of cauliflower
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- Season chicken fillets with olive oil, garlic powder, onion powder, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, remove leaves and stem from the cauliflower and chop it into florets.
- Pulse cauliflower florets in a food processor until it resembles rice.
- Heat a pan over medium heat and add a drizzle of olive oil.
- Add the cauliflower rice to the pan and sauté for 5-7 minutes until tender.
- Slice the grilled chicken and serve it over the cauliflower rice.
- Garnish with fresh parsley.

- Ensure chicken is cooked to an internal temperature of 165°F.
- Cauliflower rice can be made in advance and stored in the fridge.
- Experiment with different seasonings for the chicken.
