Delicious and nutritious muffins made with ripe bananas and dark chocolate chips.
Ingredients

- 2 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat flour
- 1/2 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the bananas until smooth.
- Add melted coconut oil, honey, eggs, and vanilla extract. Mix well.
- In another bowl, combine baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet ingredients. Stir until just combined.
- Fold in the dark chocolate chips.
- Pour the batter into a lined muffin tin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store muffins in an airtight container.
- Can substitute honey with agave syrup for a vegan option.
- Use mini chocolate chips for a different texture.
