Ingredients

  • 1 cup almond flour
  • 1 cup grated parmesan cheese
  • 2 eggs
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix almond flour, parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast in the egg, then coat with the almond flour mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook each chicken breast for 4-5 minutes on each side until golden brown.
  7. Place the chicken in a baking dish.
  8. Top each piece with marinara sauce and mozzarella cheese.
  9. Bake for 20 minutes or until the cheese is melted and bubbly.
  10. Serve hot and enjoy.
