Ingredients

- 4 oz dark chocolate (85% cacao)
- 2 tbsp unsalted butter
- 3 large eggs, separated
- 1/4 cup erythritol or preferred sweetener
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 375°F (190°C).
- Melt chocolate and butter together in a double boiler.
- In a bowl, whisk egg yolks, sweetener, vanilla, and salt.
- Mix melted chocolate into the egg yolk mixture.
- In another bowl, beat egg whites until stiff peaks form.
- Gently fold egg whites into the chocolate mixture.
- Pour into greased ramekins.
- Bake for 12-15 minutes until puffed.
- Serve immediately.

- Use high-quality dark chocolate for best flavor.
- Do not overmix the egg whites to keep soufflé airy.
- Can serve with whipped cream if desired.
