- 1 cup unsweetened shredded coconut

- 1/2 cup pumpkin seeds
- 1/4 cup erythritol
- 1/2 cup almond butter
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together almond flour, shredded coconut, sunflower seeds, pumpkin seeds, erythritol, and salt.
- Add almond butter, melted coconut oil, and vanilla extract to the dry ingredients.
- Stir until fully combined.
- Press the mixture into a lined baking dish.
- Bake for 15-20 minutes until golden brown.
- Let cool before cutting into bars.
