Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/4 cup erythritol
  • 1/2 cup almond butter
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together almond flour, shredded coconut, sunflower seeds, pumpkin seeds, erythritol, and salt.
  3. Add almond butter, melted coconut oil, and vanilla extract to the dry ingredients.
  4. Stir until fully combined.
  5. Press the mixture into a lined baking dish.
  6. Bake for 15-20 minutes until golden brown.
  7. Let cool before cutting into bars.
