Ingredients

  • 1 cup pecans, chopped
  • 2 large eggs
  • 1/2 cup sugar-free maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, melted butter, vanilla extract, and salt.
  3. Press the mixture into the bottom of a muffin tin to form a crust.
  4. In another bowl, whisk together eggs and sugar-free maple syrup.
  5. Add chopped pecans to the egg mixture and stir to combine.
  6. Pour the pecan mixture over the crust in the muffin tin.
  7. Bake for 20-25 minutes until set.
  8. Let cool before removing from the tin.
