- 1 cup almond flour
- 1/4 cup erythritol
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup pecans, chopped
- 2 large eggs
- 1/2 cup sugar-free maple syrup
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, erythritol, melted butter, vanilla extract, and salt.
- Press the mixture into the bottom of a muffin tin to form a crust.
- In another bowl, whisk together eggs and sugar-free maple syrup.
- Add chopped pecans to the egg mixture and stir to combine.
- Pour the pecan mixture over the crust in the muffin tin.
- Bake for 20-25 minutes until set.
- Let cool before removing from the tin.
Notes
- Store in an airtight container in the fridge.
- Can be served warm or cold.
