- 4 bell peppers
- 1 lb ground beef
- 1 cup cauliflower rice
- 1 cup shredded cheese
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, brown the ground beef over medium heat.
- Add cauliflower rice, diced tomatoes, garlic powder, onion powder, salt, and pepper to the skillet.
- Cook until heated through and well combined.
- Stuff each bell pepper with the beef mixture.
- Top with shredded cheese.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
- Let cool slightly before serving.
