Ingredients

  • 4 bell peppers
  • 1 lb ground beef
  • 1 cup cauliflower rice
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the ground beef over medium heat.
  4. Add cauliflower rice, diced tomatoes, garlic powder, onion powder, salt, and pepper to the skillet.
  5. Cook until heated through and well combined.
  6. Stuff each bell pepper with the beef mixture.
  7. Top with shredded cheese.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
  10. Let cool slightly before serving.
