Instructions
- Whip the heavy cream until stiff peaks form.
- In a separate bowl, mix mascarpone cheese, powdered erythritol, and vanilla extract until smooth.
- Fold the whipped cream into the mascarpone mixture gently.
- In a shallow dish, combine brewed coffee and almond milk.
- Quickly dip each ladyfinger into the coffee mixture, then layer them in cups.
- Add a layer of the mascarpone mixture over the ladyfingers.
- Sprinkle cocoa powder over the mascarpone layer.
- Repeat the layers until the cups are filled.
- Chill in the refrigerator for at least 4 hours before serving.
