Lemon Cake Truffles are bite-sized treats made from lemon cake and coated in white chocolate.
Ingredients

- 1 cup lemon cake, crumbled
- 1/2 cup cream cheese, softened
- 1 cup white chocolate chips
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
Instructions
- In a bowl, mix crumbled lemon cake and cream cheese until combined.
- Add lemon zest and lemon juice, mixing well.
- Form small balls from the mixture and place on a baking sheet.
- Chill the balls in the refrigerator for 30 minutes.
- Melt white chocolate chips in a microwave or double boiler.
- Dip each chilled ball in the melted chocolate, coating completely.
- Place the coated truffles back on the baking sheet.
- Refrigerate until chocolate hardens.

- Store in an airtight container in the fridge.
- Use fresh lemons for better flavor.
- These can be made ahead of time.
