Ingredients

  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a lined mini muffin tin.
  4. In another bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add lemon juice, lemon zest, and vanilla extract. Mix well.
  6. Pour the cheesecake mixture over the crust in the muffin tin.
  7. Bake for 15-20 minutes until set.
  8. Let cool and refrigerate for at least 2 hours.
  9. Dust with powdered sugar before serving.
