Description

Delicious lemon poppy seed muffins made with Greek yogurt for added moisture.


Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, combine sugar, Greek yogurt, oil, eggs, lemon zest, and lemon juice.
  4. Gradually add dry ingredients to wet ingredients.
  5. Fold in poppy seeds.
  6. Fill muffin cups with batter.
  7. Bake for 18-20 minutes until golden brown.
  8. Let cool before serving.
