Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the lime zest and lime juice.
  6. In another bowl, combine the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk.
  8. Fold in the shredded coconut.
  9. Pour the batter into the prepared pan.
  10. Bake for 30-35 minutes or until a toothpick comes out clean.
  11. Let it cool before serving.
