Instructions
- Preheat your oven to 350°F (175°C).

- In another bowl, combine almond milk, maple syrup, and melted coconut oil.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the diced apple.
- Pour the batter into a mini muffin tin.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let them cool before serving.
