Description

Delicious and easy no-bake pumpkin cheesecake bites.


Ingredients

  • 1 cup cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • Chocolate chips for garnish

Instructions

  1. In a bowl, mix cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice until smooth.
  2. In another bowl, combine graham cracker crumbs and melted butter.
  3. Press the graham cracker mixture into the bottom of mini muffin tins.
  4. Fill each cup with the pumpkin cheesecake mixture.
  5. Chill in the refrigerator for at least 2 hours.
  6. Garnish with chocolate chips before serving.

Notes

  • Can substitute pumpkin spice with cinnamon if desired.
  • Store leftovers in an airtight container in the fridge.
