- 1/2 cup cream cheese, softened
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup graham cracker crumbs
- 1/4 cup melted coconut oil
- 1/4 cup chopped pecans
Instructions
- In a bowl, mix pumpkin puree, cream cheese, maple syrup, vanilla extract, and pumpkin pie spice until smooth.
- In another bowl, combine graham cracker crumbs and melted coconut oil.
- Form small balls of the pumpkin mixture and roll them in the graham cracker mixture.
- Place the bites in the refrigerator for at least 30 minutes to set.
- Top with chopped pecans before serving.
