- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh raspberries
- 1/4 cup raspberry jam
Instructions
- Prepare a 9-inch springform pan by greasing it lightly.
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of the pan.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream into the cream cheese mixture.
- Spread half of the cheesecake mixture over the crust.
- Add fresh raspberries on top, then spread the remaining cheesecake mixture.
- Refrigerate for at least 4 hours or until set.
- Before serving, drizzle raspberry jam over the top.
Notes
- Use fresh raspberries for the best flavor.
- Chill the cheesecake overnight for better results.
- Substitute gluten-free crackers for a gluten-free version.
