Delicious peach cobbler cupcakes topped with a sweet crumble.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup diced peaches
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- Add butter, eggs, and vanilla; mix until smooth.
- Fold in diced peaches.
- Pour batter into cupcake liners.
- In another bowl, mix brown sugar, oats, and cinnamon.
- Sprinkle crumble on top of the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use fresh or canned peaches.
- Store leftovers in an airtight container.
- Can substitute with other fruits.
