- 1 cup gluten-free flour
- 1/2 cup peanut butter
- 1 ripe banana, mashed
- 1/2 cup coconut sugar
- 1/4 cup almond milk
- 1/4 cup chocolate chips
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, baking powder, baking soda, and salt.
- In another bowl, combine peanut butter, mashed banana, and coconut sugar.
- Add almond milk to the banana mixture and stir well.
- Gradually add the dry ingredients to the wet ingredients.
- Fold in chocolate chips.
- Pour the batter into muffin liners.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- Use ripe bananas for better sweetness.
- Adjust sugar based on sweetness preference.
