Delicious pumpkin cheesecake bars with a creamy filling on a graham cracker crust.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a greased 9×13 inch pan.
- In a large bowl, beat cream cheese until smooth.
- Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, and ginger. Mix until well combined.
- Pour the pumpkin mixture over the crust.
- Bake for 30-35 minutes or until set.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
- Store leftovers in the refrigerator.
- Top with whipped cream if desired.
- Can be made a day ahead.
