Delicious and moist pumpkin muffins made with Greek yogurt.
Ingredients

- 1 cup pumpkin puree
- 1 cup Greek yogurt
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, Greek yogurt, sugar, and vegetable oil.
- Add eggs and mix until well combined.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Mix until just combined, do not overmix.
- Fill muffin tins with batter, about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use canned pumpkin for convenience.
- Store muffins in an airtight container.
- Can be frozen for later use.
