Ingredients

  • 1 cup pumpkin puree
  • 1 cup Greek yogurt
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, Greek yogurt, sugar, and vegetable oil.
  3. Add eggs and mix until well combined.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Mix until just combined, do not overmix.
  7. Fill muffin tins with batter, about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • Use canned pumpkin for convenience.
  • Store muffins in an airtight container.
