Ingredients

  • 1 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, combine oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  4. Mix wet ingredients into dry ingredients until just combined.
  5. Fill cupcake liners with batter and bake for 20-22 minutes.
  6. Let cupcakes cool completely.
  7. For frosting, beat cream cheese and butter until smooth.
  8. Add powdered sugar and vanilla, beat until fluffy.
  9. Frost cooled cupcakes with cream cheese frosting.

  • Use gel food coloring for a more vibrant color.
  • Store cupcakes in an airtight container.
