- 1 cup heavy cream
- 1/2 cup unsweetened almond milk
- 1/2 cup erythritol
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 tablespoon gelatin powder
Instructions
- In a saucepan, combine heavy cream, almond milk, erythritol, cocoa powder, and sea salt.
- Heat over medium heat, whisking until the mixture is smooth and starts to simmer.
- In a small bowl, dissolve gelatin in a few tablespoons of warm water.
- Remove the saucepan from heat and stir in the dissolved gelatin and vanilla extract.
- Pour the mixture into serving dishes and refrigerate for at least 2 hours.
- Serve chilled, topped with a pinch of sea salt.
Notes
- Adjust sweetness to your taste.
- For a thicker pudding, increase gelatin.
- Store leftovers in the fridge for up to 3 days.
