Ingredients

  • 1/2 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine crushed graham crackers, sugar, and melted butter.
  3. Press mixture into the bottom of cupcake liners.
  4. In a bowl, mix cream cheese, sugar, vanilla, and egg until smooth.
  5. Fold in chopped strawberries.
  6. Spoon cheesecake mixture over the crust in liners.
  7. Bake for 20-25 minutes.
  8. Allow to cool before serving.
