Delicious strawberry cheesecake cupcakes topped with fresh strawberries.

- 1 cup crushed graham crackers
- 1/4 cup sugar
- 1/2 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 350°F (175°C).
- Combine crushed graham crackers, sugar, and melted butter.
- Press mixture into the bottom of cupcake liners.
- In a bowl, mix cream cheese, sugar, vanilla, and egg until smooth.
- Fold in chopped strawberries.
- Spoon cheesecake mixture over the crust in liners.
- Bake for 20-25 minutes.
- Allow to cool before serving.
Notes
- Use fresh strawberries for best flavor.
- Chill cupcakes for an hour before serving.
- Top with whipped cream if desired.
