Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup coconut flour
  • 1/2 cup sugar
  • 1/2 cup coconut milk
  • 1/2 cup diced mango
  • 1/4 cup coconut oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, coconut flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, coconut milk, and melted coconut oil.
  4. Add the wet ingredients to the dry ingredients and mix well.
  5. Fold in the diced mango.
  6. Pour the batter into a muffin tin lined with paper liners.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
