Ingredients

- 1 cup gluten-free flour
- 1/2 cup coconut flour
- 1/2 cup sugar
- 1/2 cup coconut milk
- 1/2 cup diced mango
- 1/4 cup coconut oil
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, coconut flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, coconut milk, and melted coconut oil.
- Add the wet ingredients to the dry ingredients and mix well.
- Fold in the diced mango.
- Pour the batter into a muffin tin lined with paper liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- These muffins freeze well.
- Feel free to add nuts or seeds for extra texture.
