Ingredients

- 2 cups heavy cream
- 1/2 cup erythritol
- 1 tablespoon vanilla extract
- 1 packet gelatin (about 2 1/4 teaspoons)
- 1/4 cup water
Instructions
- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes.
- In a saucepan, heat heavy cream, erythritol, and vanilla extract over medium heat until warm.
- Remove from heat and stir in the gelatin mixture until dissolved.
- Pour the mixture into serving cups and refrigerate for at least 4 hours.
- Serve chilled and enjoy.
Notes
- Make sure to use unsweetened vanilla extract.
- Adjust sweetness according to your preference.
- Can be topped with berries for added flavor.
