Delicious vegan chocolate avocado truffles.
Ingredients

- 1 ripe avocado
- 1 cup dark chocolate chips
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder (for rolling)
Instructions
- Melt dark chocolate chips in a microwave or double boiler.
- In a bowl, mash the ripe avocado until smooth.
- Add melted chocolate, maple syrup, and vanilla extract to the mashed avocado and mix well.
- Chill the mixture in the refrigerator for 30 minutes.
- Once chilled, scoop out small portions and roll into balls.
- Roll each ball in cocoa powder to coat.
- Refrigerate truffles until firm.
Notes
- Store truffles in an airtight container in the refrigerator.
- Try adding nuts or coconut for extra flavor.
