- 1 cup cooked and pureed beets
- 1 cup almond milk
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 cup gluten-free all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegan chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the pureed beets, almond milk, maple syrup, and melted coconut oil.
- In another bowl, combine the gluten-free flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the vegan chocolate chips.
- Pour the batter into muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store muffins in an airtight container.
- These muffins freeze well.
- For a sweeter taste, add more maple syrup.
